Grilled Avocados with Shrimp and BBQ Quinoa

Ingredients

  • 3 large avocados - best when ripe but still firm
  • 2 cups cooked quinoa
  • 1 bunch chives or green onion thinly sliced
  • 1/2 cup diced red onion
  • 3/4 lb medium shrimp - peeled & de-veined
  • 1/2 cup Rufus Teague Smoke N Chipotle Sugar-Free BBQ Sauce
  • 1 Tbsp Rufus Teague Fish Rub
  • olive oil
  • salt and pepper

Instructions

  1. Make the quinoa according to instructions on packet. Mix in
  2. red onion and BBQ Sauce and allow to cool as you prep rest of ingredients.
  3. Prepare grill for medium heat. Place 2 Tbsp of olive oil and 1 Tbsp of Fish Rub in large plastic baggie or bowl. Mix thoroughly then add shrimp and make sure all are coated. (Note: if shrimp are small enough to fall through grill grates, you may want to put them on skewers)
  4. Cut avocados in half and remove pit. Brush tops with olive oil and sprinkle with salt and pepper.
  5. Place avocados cut-side down on grill. Cook for 4 minutes.
  6. Add shrimp to grill and cook for 3 minutes on each side.
  7. Remove avocados and shrimp.
  8. Stuff the avocados with quinoa mixture. Roughly chop the shrimp and place over quinoa.
  9. Top with chives and serve.
