It didn't happen over night, but Rufus Teague's sauce has sure come a long way. From the ol' pot he used to stir it in, to winning competitions all over the place it has still stayed pretty much the same. If he was still around there's no doubt he'd be tellin' everybody within earshot of how he knew he had something with this recipe from day one. And remember,

"Good sauce makes bad barbecue good and good barbecue gooder."

Bacon Spiked BBQ Dirty Rice

6 slabs thick cut bacon, diced

1 onion, minced

2 garlic cloves, minced

1 can Stewed tomatoes

1 ½ cup long grain rice

3 cups water

2/3 cup Rufus Teague Apple Mash BBQ sauce

1 1/2 teaspoon salt

1 teaspoon pepper

Wash your rice under cold water until the water runs clear.

Render your bacon in a medium sized pot. Remove the bacon, but leave the fat.

Cook onions and garlic in bacon fat for about 3-5 minutes.

Add your rice and sauté in fat as well for about 2 minutes.

Add your BBQ sauce, stewed tomatoes, water, salt, and pepper. Cover and place the flame on medium/low heat. Half way through the cooking process, about 15 minutes in, add in your bacon.

Cook for another 15 minutes, or until the liquid has fully evaporated and the rice is tender.

Top with more Apple Mash BBQ sauce and some thyme.
